These draft guidance notes aim to provide a basis for a commonly agreed and consistent national standard in outdoor catering management. They seek to define acceptable food safety standards and health and safety requirements for catering at outdoor events.
They have been produced in consultation with environmental health practitioners, trading standards officers with experience of large outdoor events and markets and other key stakeholders such as industry representatives, LACORS and outdoor catering trade associations.
The guidance notes have been written primarily for environmental health professionals to facilitate a national consistent approach ensuring clarity of standards and processes.
The guidance notes are undergoing a proactive consultation process during 2009 to enable the advice and recommendations to be tested throughout the full event calendar. The CIEH will collate all the learning outcomes and feedback from the use of the guidance by enforcement officers and review the document and best practice at a workshop organised in the late autumn of 2009
