Our essential Safe Food Conference brings together all food safety professionals both from local authorities and the private sector to discuss the health inequalities which have been identified as major issues in the discussion about levelling up. We will also be hearing about the new and latest industry guide for catering from UKHospitality, which will have just been published, and therefore hot off the press! Dr Belinda Stuart-Moonlight

Dr Belinda Stuart-Moonlight, Chartered Environmental Health Practitioner. Belinda specialises in food safety and infectious intestinal disease control. Early in her career, Belinda worked as an Environmental Health Officer in local government enforcement, before taking up a Junior Research Fellowship at King’s College London. For the last twenty years, Belinda has run her own business providing consultancy, training, auditing and expert witness services. As an expert witness, the majority of her instructions focus on food contamination risk, and increasingly, injury and death from food allergy. Belinda is regularly sought after to provide opinion for both prosecution and defence, as well as for Coroners inquests.

Carol Archibald

Carol Archibald, Chartered Environmental Health Practitioner and Team Manager at Tendring District Council. Carol trained at Middlesex and works as a Team Manager for food health and safety, port health and animal and beauty licensing at Tendring District Council. She is a fellow of CIEH, the chair of the Essex Food Liaison Group, and a member of the Food Hygiene Focus Group. Carol is known for her work on Scores on the Doors that lead to the Food Hygiene Rating Scheme (FHRS). She is also co-creator of the Essex TuckIN making food better project which seeks to encourage small businesses to pledge to reduce salt, fat sugar and calories.

Caroline Benjamin

Caroline Benjamin, Director of Food Allergy Aware. Caroline founded awarding-winning Food Allergy Aware (FAA) in 2013 to enable food operational businesses in all sectors to understand and embrace the Food Hypersensitive (FHS) customer. Developing solutions to give businesses the tools, knowledge and expertise to not only manage the regulations, but go the extra mile, offering a positive customer journey for the FHS customer. FAA offers training, consultancy and bespoke auditing services, including mystery dining, which assists with compliance for in-house and external policies and raising standards and profile of hospitality businesses. Caroline has worked alongside local authorities providing training for their businesses, and offers a bespoke training courses to assist local authority officers in understanding what key points to look for when auditing for allergen management. In collaboration with Sally Trice (STCC), Caroline provides CIEH food safety and health and nutritional training. Caroline is also campaigning for hospitality business to acknowledge and incorporate ‘Near Miss reporting’ for both allergen management and food safety processes.

Darryl Thomson BSc MIH MRSPH

Darryl Thomson BSc MIH MRSPH, Chair of Food Experts Group and Co-Author of the Catering Industry Guide 2022 at UKHospitality. Having graduated with a degree in Catering Sciences, Darryl joined Bass plc and has spent a long and varied career starting as a General Manager of a public house, and then as an Area Manager followed by time in Marketing and Risk and Compliance, before being appointed as the Head of Safety for Mitchells and Butlers. Responsibilities included all aspects of Food Safety, Fire, Health and Safety, Trading Standards, Food Technical, including Allergens, and Safety and Quality within the supply chain. In 2009, Darryl was a member of the Food Standards Agency’s (FSA) Working Group on scoring and safeguards for the Food Hygiene Rating Scheme. He subsequently gave evidence to the House of Lords Opposed Bill Committee on behalf of the BBPA when they petitioned the House of Lords against clause 10 of the London Local Authorities Bill 2008 (Mandatory Display for Scores on the Doors). In October 2019, Darryl was appointed chair of the Food Hygiene Rating Scheme Steering Group which advises the FSA.

Greer Deal

Greer Deal, Director of Global Regulatory Services. A fellow of the Chartered Management Institute (CMI) and member of The Organisation for Professionals in Regulatory Affairs (TOPRA), Greer has over 25 years’ experience in the life sciences. In 2007, she co-founded Global Regulatory Services (GRS) to focus on regulatory affairs and quality compliance. The company’s first client was involved in developing a medicinal cannabis product and since then Greer has been closely involved in the regulatory requirements for cannabis, and its extracts, for medicinal, health and beauty purposes worldwide. In more recent years, she and her team have been working closely with the UK and EU regulators to bring CBD ingestibles, already on the market, into compliance with the Novel Food Regulation as well as the regulators own particular requirements, unique to CBD products. Greer is passionate about regulatory affairs being seen as a valuable asset for future success.

Dr Hazel Gowland MREHIS FIFST FRSPH

Dr Hazel Gowland MREHIS FIFST FRSPH, Expert Patient and Consumer Advocate at Allergy Action. Hazel is a leading food allergy advocate, expert patient, consumer, researcher and university lecturer. As a food hypersensitive consumer, she informs and shapes allergen risk assessment and develops innovative and effective training programmes. Her research includes the quality of life and cost of living with food hypersensitivity, understanding and recording severe and fatal reactions and the regulatory context of food allergy.

Jim Cathcart

Jim Cathcart, Policy Director at UKHospitality. Jim was appointed as Policy Director in April 2018. He specialises in issues and legislation relevant to the industry including digital issues and online platforms, food regulation and nutrition policy, copyright and legal, property and planning, and alcohol licensing. Jim represents member interests with government officials and other stakeholders on a wide range of policy areas.

Jonathan Hayes

Jonathan Hayes, Risk Director at Moto Hospitality. Jonathan covers all aspects of regulatory compliance, insurance, business resilience, continuity and ESG. A Chartered Environmental Health Practitioner, he has worked in both the public and private sectors. Jonathan is also a trustee of the CIEH and member of the CIEH Health and Safety expert advisory panel.

Katie Pettifer

Katie Pettifer, Strategy and Regulatory Compliance Director at the Food Standards Agency (FSA). Katie is responsible for the FSA’s strategy, communications, legal, regulatory compliance and governance work. Katie also leads the FSA’s Achieving Business Compliance Programme, which is reforming the way that food businesses are regulated by local authorities. Before joining the FSA in July 2021, Katie was the Public Policy Director at Ofcom, where she played a major role in shaping Ofcom’s work to improve mobile and broadband coverage across the UK and to develop new regulation to protect people from harmful content online. She also led on Ofcom’s diversity and inclusion strategy. Before that, Katie spent two decades in the civil service, and held senior roles in the Ministry of Justice, the Cabinet Office and the Northern Ireland Office.

Sue Pritchard

Sue Pritchard, Chief Executive of the Food, Farming and Countryside Commission. Sue leads the organisation in its mission to bring people together to act on the climate, nature and health crises, through fairer and more sustainable food systems, and a just transition for rural communities and the countryside. Sue’s background is in combined research and practice in leadership and organisation development for systems change, working with leaders across public, private and not-for-profit organisations, especially on complex partnership projects. She is a Trustee of the CoFarm Foundation and an independent Governor at the Royal Agricultural University. Living on an organic farm in Wales, Sue and her family raise livestock and farm for conservation.

William Roberts

William Roberts, Chief Executive at Royal Society for Public Health (RSPH). William joined RSPH in June 2022, at a pivotal time for public health. His leadership and enthusiasm will be vital to ensure the organisation is in the best possible position to advocate, develop and support the health of all members of the public. He has a wealth of experience across public health and inequalities from the NHS, third sector, social care, housing, local government and further education. Previously, William was a senior leader in the NHS across roles in public health, strategy, transformation and planning. He is also a registered nurse who has worked in both hospital and community services, and a nurse specialist in tuberculosis and HIV. William is also Deputy Chair of the Terrence Higgins Trust and a Non-Executive Director of Housing 21 and POBL, two large housing and care providers.

Sterling Crew

Sterling Crew CEnvH FCIEH, Independent Scientific Advisor and Chair of the Food Authenticity Network’s Advisory Board. Sterling sits on the Board of Trustees for CIEH and has over 35 years' experience working in the food industry. He has experience working in the fields of food safety, governance, horizon scanning, sustainability and innovation. Sterling is an experienced food sector director, who holds a portfolio of positions including Independent Scientific Advisor at Campden BRI where he also sits on their Board. He is Chair of the Advisory Board of the Food Authenticity Network and Co-Founder of Kitchen Conversation with Dr Lisa Ackerley. He is a Managing Director of SQS, Strategic Advisor at Shield Safety Group and to Dynamic Risk Indicator. He also sits on the audit governance board at Eurofins.

Marva Hewitt

Marva Hewitt FRSHH MCIEH, Managing Director of Food Hygiene Bureau. With a food safety doctoral degree pending, and more than 33 years’ experience as an Environmental Health Practitioner, Marva has a passion for Food Hygiene and Safety Management Systems. She has worked with SMEs in agro-processing, callaloo; ready to eat roasted breadfruit, hydroponic herbs. Marva has collaborated with NGOs, private and public sector entities, and has travelled extensively in Asia, North America and the Caribbean to conduct audits, training and conferences. She has hosted and conceptualized nine international food safety and food security international conferences and symposiums.
