Egg safety exposed: understanding the risks of imports and the assurance of British Lion

With Salmonella cases linked to imported eggs putting egg safety firmly in the spotlight for food businesses and their customers, join food safety experts Sterling Crew and Dr Lisa Ackerley for a practical discussion on what EHPs should be looking for when assessing egg sourcing and food safety practices.

The webinar will explore the current outbreak, the importance of egg sourcing and provenance, and the essential controls food businesses should have in place, from supplier assurance and traceability to storage, handling and preparation.

It will also look at the world-leading food safety standards behind British Lion eggs and egg products, including mandatory Salmonella vaccination, rigorous controls and traceability throughout the supply chain. British Lion eggs, unlike imported eggs, are recognised by the Food Standards Agency as safe to be served runny or even raw to vulnerable groups, demonstrating the exceptionally low Salmonella risk achieved under the scheme.

A practical, expert-led session to help EHPs understand the risks, recognise best practice, challenge poor sourcing and support food businesses in maintaining high standards of egg safety.

Sterling Crew is a food safety advocate with 40 years of experience working in the field of food safety, security, authenticity and global supply chain governance. Sterling is a trustee of the CIEH and  sits on its food advisory panel. He is President of the Institute of Food, Science and Technology and Chairs The Food Authenticity Network. He also holds a number of food related board positions. He acts as an independent scientific and regulatory advisor including for British Lion Mark.

He started his career in government before a successful track history in retail , manufacturing. and the branded world.  Sterling’s experience as a regulator, retailer, brand owner and food manufacturer has given him a unique perspective of the challenges of the global food supply system.
